Message from the Chef

Why this degustation menu introduces fatty food such as Duck, Pork, and  Pommes  Anna?

  • The reason is Fat slows down the absorption of alcohol and help lesson stomach irritation.
  • While the  carbohydrates prevent low blood sugar and eases nausea.
  • The two help reduce the bi-product of the alcoholic metabolism such as Acetaldehyde which is  10-30  times more toxic ethanol than (alcohol)  and it is the main cause of a hang over and headache.
  • Slowing down the rate of your alcoholic metabolism gives the liver more time to produce Glutathione,  an enzyme that helps to speed up  the conversion of  Acetaldehyde  into Acetate which will be easily  broken down into Carbon Dioxide and Water.
